Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter
  • ½ tsp salt
  • 5 tbsp water
  • 200 g bacon, breakfast bacon or cooked ham
  • 3 eggs
  • 250 ml cream
  • 1 pinch(s) of pepper
  • 125 g cheese (Emmental cheese)

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Lorraine cheesecake

Make a shortcrust pastry from flour, butter, salt, and water and refrigerate for about 2 hours. Roll out the dough on a floured surface to about 4 mm thick and line the sides and bottom of the springform pan. Prick the pastry base several times with a fork. Cover the pastry with bacon or ham. Whisk together the eggs, cream, and pepper, grate the cheese, and fold in. Then pour over the ham or bacon. Bake at 200 degrees Celsius (200 degrees Celsius) for about 30 minutes (second rack from the bottom).
