Ingredients for 1 servings:
- 160 g flour
- 3 tbsp water
- 100 g butter, soft
- 1 pinch of salt
- 1 tbsp butter
- 3 slices of bacon (omit for vegetarian option)
- 2 onions
- 1 clove(s) garlic
- 200 g spinach, blanched and drained or frozen
- 4 tomatoes, dried in oil
- 3 eggs
- 150 g sour cream
- 100 g goat’s cheese
- 3 tbsp hard cheese, freshly grated
- salt and pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 2 hours 5 minutes
Mixture for a quiche dish, also vegetarian
Put the flour and salt in a bowl, make a well in the center, and pour in the cold water. Add the butter, cut into cubes, and knead everything into a dough. Wrap the dough in foil and let it rest in the refrigerator for a good hour. Cut the bacon (omit this for the vegetarian quiche) and onion into small cubes and fry them in a pan with the butter. Add the garlic, spinach, and sliced tomatoes, and remove the pan from the heat. Mix the eggs, sour cream, and goat’s cheese together, season with salt, nutmeg, and pepper. Pour this mixture into the pan and stir into the spinach mixture. Roll out the dough on a floured surface, place it in the dish, and press it down lightly. Pour the goat cheese and spinach mixture over the dough and spread it evenly. Sprinkle with grated cheese if you like, but it’s still delicious without that final touch. Bake in a preheated oven at 180°C for about 30 minutes with fan/bottom heat. Let it cool slightly before slicing to prevent it from falling apart. To serve: Cut the quiche into six or eight slices like a cake and serve with a glass of white wine.
