Quick and easy mayonnaise

Ingredients for 4 servings:

  • 1 egg(s)
  • 1 tsp mustard
  • 1 tsp lemon juice
  • Salt
  • pepper
  • Oil, tasteless (e.g. safflower oil or corn germ oil)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with the hand blender

Crack the egg and pour it all into a tall container (with measuring marks). Add the mustard and lemon juice, and a little salt and pepper. Pour in the oil until you reach 300 ml at the measuring mark on the container. Place the hand blender in the container and switch it on. Wait a moment until some mayonnaise forms and then slowly pull it up. Remove the hand blender, taste the mayonnaise and add a little more salt, pepper, lemon juice or mustard if necessary and blend briefly again with the hand blender. If the mayonnaise is not thick enough, add another 20 to 50 ml of oil and blend again with the hand blender. 1. Tip: If you want a kind of salad mayonnaise, you can stir in a little yogurt or sour cream with a spoon at the end. The amount varies according to taste. 2. Tip: If you want an aioli, simply add 2 to 3 cloves of garlic to the container at the beginning. 3. Tip: The container should only be big enough for the hand blender to just fit inside.
