Quick and easy noodle and vegetable soup

Ingredients for 3 servings:

  • 750 ml vegetable broth or chicken broth
  • 200 g Kaiser vegetables, frozen
  • 80 g Kritharaki (rice-shaped noodles), other small noodles or soup noodles
  • e.g. salt and pepper
  • some nutmeg, freshly grated
  • 1 bunch of chives
  • possibly marrow dumplings or baked peas

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Bring the broth to a boil, add the vegetables and noodles, and simmer for about 8-10 minutes. Season the soup with salt, pepper, and nutmeg. If desired, add marrow dumplings and/or fried peas. Wash the chives, shake them dry, cut them into rolls, and garnish the soup with them. This is a quick and easy soup that’s versatile, as you can simply use whatever you have on hand.
