Quick and healthy energy bars

Ingredients for 1 servings:

  • 2 bananas
  • 2 tbsp fruit juice
  • 150 g sour cherries from the jar
  • 100 g sultanas
  • 150 g oat flakes
  • ½ tsp baking powder
  • 50 g coconut oil
  • 20 g butter
  • 40 g honey
  • 40 g hazelnuts, grated
  • 40 g almond sticks
  • 40 g desiccated coconut

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 30 minutes

Mash the bananas, sour cherries, and sultanas with their juice using a fork in a bowl, then stir in the oats. Heat the butter and coconut oil slightly in the microwave and gradually add them along with the remaining ingredients. When the mixture is smooth, pour it onto a baking tray lined with baking paper and spread it out into a rectangle about 1.5 cm thick so that the bars can be easily cut later. Bake in an oven preheated to 175 degrees Celsius for about 20 minutes until lightly golden. Once cooled, refrigerate for at least an hour. Afterwards, cut and wrap the individual bars in cling film. This recipe makes 10 relatively large bars. If stored in the refrigerator, the bars should last at least a week.
