Quick apple muffins with apple juice

Ingredients for 1 servings:

  • 1 apple
  • 1 egg(s)
  • 150 g sugar
  • 230 g flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • 80 ml oil
  • 200 ml apple juice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

makes about 12 muffins

Preheat the oven to 180°C (fan assisted oven). Peel the apple and cut into small pieces. Beat the egg until lightly fluffy, then add 140g of sugar. Sift together 230g of flour, baking powder, baking soda, and cinnamon. Mix together 80ml of oil and 200ml of apple juice. Stir in the flour mixture and the oil-apple juice mixture alternately. Slowly fold in the apple pieces. Pour the batter into the muffin tin and bake for approximately 20-25 minutes.
