Ingredients for 4 servings:
- 1 head of broccoli
- 250 g shepherd’s cheese
- 1 avocado(s)
- 250 g tomatoes
- 20 g pine nuts, or nuts contained in a salad seed mix
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar, dark
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp mustard
- 1 pinch(s) of salt and pepper
- 1 pinch(s) curry powder
- 1 pinch(s) sweet paprika powder
- 1 pinch of chili flakes

Wash the broccoli thoroughly and tear or chop it into small pieces. If you’re in a hurry, simply use frozen broccoli, steam it, rinse it, and let it cool. Cut the tomatoes into eighths, finely chop the feta cheese and avocado, and add them to the cooled broccoli. Toast the seeds in a pan and add them as well. For the dressing, simply stir together the remaining ingredients and pour over the salad.
