Quick couscous salad

Ingredients for 3 servings:

  • 180 g couscous
  • 180 ml vegetable stock
  • ½ cucumber(s)
  • 1 bell pepper(s)
  • 200 g tomatoes
  • 2 spring onions, or 1 onion, halved and thinly sliced
  • 6 basil leaves, or more
  • ½ lemon(s), juice
  • 2 tbsp olive oil
  • salt and pepper
  • garlic powder

Working time approx. 10 minutes; Total time approx. 10 minutes

WW-suitable, light, fresh, delicious!!!

Dice the cucumber, bell pepper, and tomato. Slice the spring onions into rings. Place everything in a bowl. Roughly chop the basil and add it. Add the lemon juice (amount to taste; I usually use the juice of a whole lemon—I like it sour), as well as the olive oil. Season with salt, pepper, and garlic powder. Pour the hot vegetable broth over the couscous in a bowl and let it swell for a few minutes. Then add it to the bowl with the vegetables and stir to combine. Adjust the seasonings if desired.
