Quick lemon herb butter

Ingredients for 4 servings:

  • 1 bunch of chives
  • ½ bunch parsley, flat
  • ½ bunch of dill
  • 1 sprig(s) of thyme
  • ½ bunch basil
  • 3 cloves garlic, fresh, finely chopped
  • 1 small lemon(s), the juice
  • ½ pack of butter, soft or warm
  • Salt
  • 1 sprig(s) mint

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for grilling or simply to refine vegetables, steak or baked potatoes

Clean the herbs, chop or slice them finely, and place them in a bowl (preferably not with a hand blender, as this will lose their flavor). Add the lemon juice and chopped garlic, then stir in the butter (I simply use a spoon, not a mixer or similar, because this makes the butter very fine; I prefer it a bit coarser). Finally, season well with salt. Be sure to let the butter marinate in the refrigerator for a few hours before serving (mix in a pinch of curry powder if desired). Tip: For an even fresher butter, increase the amount of lemon juice or use more mint.
