Quick lentil soup, camping soup

Ingredients for 2 servings:

  • 1 tbsp olive oil
  • 50 g smoked ham, diced
  • 1 onion(s) (approx. 120 g), chopped
  • Vegetable stock cubes for 500 ml dissolved in 400 ml water
  • 400 g waxy potatoes, diced
  • 1 gr. can/n lentils with soup vegetables
  • 50 ml red wine
  • Balsamic vinegar
  • salt and pepper
  • Nutmeg, grated
  • 1 tsp, sautéed marjoram
  • 1 tsp savory
  • possibly Tabasco or Piri Piri
  • 300 g sausages (Vienna)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

prepare everything in one pot

Brown the diced ham in oil. Add the diced onions and cook until golden brown. Add the potatoes, top up with the broth, season with salt, and simmer for about 12 minutes. Add the lentils, marjoram, savory, and wine; heat through and season with balsamic vinegar, salt, pepper, nutmeg, and, if desired, Piri Piri or Tabasco. Simmer for another 5 minutes, add the chopped sausages, remove the pot from the heat, and heat the sausages through for 5 minutes. This will make about 1.8 liters of soup in one pot, which makes four bowls.
