Ingredients for 1 servings:

  • 250 g low-fat curd cheese
  • 5 eggs
  • 2 tbsp apple cider vinegar
  • 100 g almonds, ground
  • 50 g chia seeds
  • 50 g psyllium husks, ground
  • 50 g golden linseed
  • 50 g sunflower seeds or other seeds or nuts
  • 1 packet of baking powder
  • 1 tsp salt
  • 2 tsp bread spice mix
  • 20 g coconut flour

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Preheat the oven to 180°C fan/convection oven. In a bowl, combine the quark, eggs, and apple cider vinegar. In another bowl, mix the remaining dry ingredients well. Then add the dry ingredients to the quark and egg mixture and mix everything well with a dough hook. With wet hands, form a loaf of bread and place it on a baking sheet. Then make a few slits in the top. Bake at 180°C fan/convection oven for approximately 55-60 minutes, then let it cool on a wire rack.
