This isn’t an attempt to write down a recipe for classic mango chutney. Rather, it’s a quick recipe for a sauce that tastes similar to mango chutney, is quick to make, and goes particularly well with Asian barbecues. Peel the mango and separate the flesh from the stone. Dice the flesh and place it in a container. Peel and dice the ginger and add it to the container. Add sugar, salt, and pepper. Drizzle with lime juice. Puree everything with a hand blender and refrigerate. Let it sit for a while before serving, then serve with grilled meat. Makes about a jam jar full.
