Ingredients for 6 servings:
- 6 slice(s) of bread (farmer’s bread or homemade bread)
- 300 g minced meat, mixed
- 1 stale roll
- some oil for frying
- 1 onion(s), finely chopped
- 100 g mushrooms, sliced
- 1 bell pepper(s), diced
- 1 tomato(s), cut into small cubes
- 100 g cheese, spicy, finely chopped or coarsely grated
- 1 tsp oregano, dried
- 1 tbsp mustard
- 1 clove(s) garlic, finely chopped
- salt and pepper
- Paprika powder
- possibly chili powder
- 6 eggs
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Soak the bread roll in cold water and then squeeze out any excess water. Briefly fry the chopped onion in a little oil. Add the sliced mushrooms and sauté briefly. Place the minced meat in a bowl. Mix well with the squeezed-out bread roll, onion, mushrooms, bell pepper, tomato, cheese, oregano, mustard, and garlic. Season to taste with salt, pepper, paprika, and chili powder, if desired. Spread the minced meat mixture onto the bread slices about 1 cm thick. Note: Spread well right up to the edges, otherwise the bread will become too dark around the edges! Line a baking tray with baking paper and place the bread on it. Bake in a preheated oven at 180 degrees (top/bottom heat) for about 25 minutes. Fry the eggs in a pan with a little oil until they are fried. Season lightly with salt and pepper. Place the finished meatballs on plates and top each with a fried egg. Serve with salad, if desired.
