Ingredients for 1 servings:

  • 8 eggs
  • 4 tbsp water, hot
  • 250 g flour (wheat flour)
  • 4 packets of vanilla sugar
  • 250 g sugar
  • 50 g cornstarch
  • 2 tsp baking powder
  • 12 tsp honey (forest honey)

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Whisk the eggs and water until frothy, then gradually add the sugar, vanilla sugar, and flour (mixed with baking powder and starch) and beat until frothy. Add the honey and beat again on high speed until frothy. Preheat oven to 170 degrees Celsius (350 degrees Fahrenheit). Pour half of the batter onto the prepared baking sheet lined with parchment paper (lightly greased with margarine) and bake for about 5-7 minutes, until a thin film forms on the lembas. Then pour the remaining batter on top and bake until golden brown (about 20-25 minutes). Let cool and cut into pieces.
