Quick potato pancakes

Ingredients for 4 servings:

  • 8 m.-sized potatoes, new, cooked
  • olive oil
  • Thyme
  • Parmesan
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

somewhat unconventional in production, but super tasty

Place the cooked potatoes, skin on, on baking paper and then gently press down with a potato masher, so they break open but don’t mash. Brush each potato with olive oil, season with thyme, sprinkle with a little Parmesan cheese, and briefly place under the preheated grill. Once lightly browned, season with salt and pepper and serve. This dish goes perfectly with pan-fried meats and light sauces.
