Ingredients for 2 servings:
- 1 garlic clove(s)
- 100 g almonds, ground
- 1 tbsp lemon juice, organic
- 2 beetroot tubers, vacuum-packed
- 50 ml olive oil
- 4 mint leaves, fresh
- 4 sprigs of parsley
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the garlic clove. Place it in a tall bowl along with all the other ingredients and blend until smooth. Tastes great with spaghetti and perhaps Parmesan cheese.
