Quick spinach and salmon pot with gnocchi

Ingredients for 3 servings:

  • 450 g leaf spinach, frozen, thawed & squeezed
  • 400 g gnocchi, fresh (from the refrigerated section)
  • 100 ml cream (or low-fat substitute)
  • 150 g crème fraîche with herbs
  • 200 g smoked salmon (sliced)
  • ½ onion(s), diced
  • pepper
  • little salt
  • possibly pine nuts, roasted

Instructions

Working time approx. 8 minutes; Total time approx. 8 minutes

Cut salmon slices into strips. Combine all ingredients, except the fish, and cook covered for 5 minutes at 600 watts, then stir in the salmon strips. Cook with the lid on for another 3-4 minutes. TIPS: Thaw the spinach either at room temperature for several hours or for 15 minutes at 180 watts, then let it rest for 5 minutes. This dish cooks very well in a Tupperware Ultra Plus 3-liter container (alternatively, any other microwaveable dish will do, of course). Toasted pine nuts are delicious with it; sprinkle them on top before serving.
