Quick stir-fried vegetables with wild rice

Ingredients for 2 servings:

  • 1 broccoli
  • 2 carrots
  • 450 g mushrooms
  • 1 can coconut milk
  • Soy sauce
  • Sambal Oelek
  • some red wine to deglaze
  • 150 g wild rice

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Sauté the broccoli briefly, but not too long; it should still be crisp and green afterward. Sauté the mushrooms in a pan and deglaze with red wine. Add the broccoli and mushrooms to the wok and season with soy sauce. Add the coconut milk and a little sambal oelek and bring everything to a boil. Peel the carrots into strips and add them to the wok. Mix everything together and wait until the carrots are hot. Meanwhile, cook the wild rice according to the package instructions and serve with the stir-fried vegetables.
