Quick strawberry-rhubarb-yogurt dessert

Ingredients for 4 servings:

  • Roasted rhubarb, recipe can be found on my profile page
  • 4 strawberries
  • 200 g Greek yogurt
  • 1 tbsp vanilla extract, homemade, alternatively pulp of a vanilla pod
  • 1 tbsp honey

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

First, prepare the roasted rhubarb. While it’s in the oven, wash and finely dice the strawberries. Place the strawberries in a bowl. Next, mix the Greek yogurt with the homemade vanilla extract and honey. Spread the yogurt over the strawberries. Once the rhubarb is ready, add it, along with some of the roasting juices, hot or cold, to the yogurt.
