Roasted rhubarb from the oven

Ingredients for 4 servings:

  • 700 g rhubarb, cleaned, approx. 800 g uncleaned
  • 3 oranges
  • 4 cardamom pods
  • 2 vanilla pods
  • 1 tsp honey

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 34 minutes

First, peel the rhubarb and cut into approximately 3 cm pieces. Meanwhile, preheat the oven to 200 degrees fan-assisted. Slice one of the oranges and juice the other two. Crush the cardamom pods with a mortar and pestle or the back of a knife to release more of their aroma. Scrape out the vanilla seeds and set aside with the pods. Mix the rhubarb with the orange slices, cardamom pods, seeds, and pods and spread them in a roasting tin. Drizzle with the honey and orange juice, and mix well. Place the roasting tin on the middle rack of the oven for 14 minutes. Remove the vanilla pods after baking.
