Ingredients for 2 servings:
- 2 large bell peppers
- 250 g minced meat
- salt and pepper
- 100 g cheese, grated, e.g. Emmental
- Vegetable broth, amount depends on the casserole dish
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes
Only 5 minutes preparation time, low carb suitable
Preheat oven to 180°C. Wash the peppers, halve them lengthwise (not crosswise, as usual), and remove the core and stem. Season the minced meat with salt and pepper and stuff the pepper halves. Sprinkle the pepper halves with cheese and place them in a baking dish. Fill the baking dish with vegetable stock up to the top of the peppers, ensuring the stock does not touch the filling. Do not pour the stock over the peppers. Bake for approximately 20 minutes.
