Quick-to-prepare truffle sauce

Ingredients for 4 servings:

  • 1 tbsp butter
  • ¼ liter meat broth
  • ¼ liter cream
  • 1 tbsp oil (truffle oil)
  • Vinegar
  • 2 shallots

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely chop the shallots, sauté in butter, add a dash of vinegar, and let it reduce. Pour in the broth and cream, reduce by about half, and blend with the truffle oil in a blender. This sauce is perfect with black pudding ravioli. Drizzle with the foamed truffle sauce and garnish with truffle shavings.
