Quick tomato salad

Ingredients for 4 servings:

  • 500 g cocktail tomatoes
  • 1 handful of olives
  • 1 tbsp vinegar
  • 1 tbsp oil, possibly less if the olives were marinated in oil
  • 1 tsp oregano, or Italian herbs
  • 1 pinch(s) of pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

A super delicious, simple salad!

Wash the tomatoes and squeeze the juices into a large bowl, then add them to the bowl. Chop the olives into small pieces and add them. Grind the herbs (if they’re not fresh) in a mortar and pestle and add them. Add pepper, vinegar, and a little oil, and salt if desired. The olives usually provide enough salt. The salad tastes best when refrigerated for a few hours. It’s also delicious without the olives. It also goes well with bruschetta.
