Ingredients for 4 servings:
- 250 g tortellini (tricolore)
- 250 g cherry tomatoes
- 1 half cucumber(s)
- 1 large onion(s)
- 1 cup sour cream
- 1 cup sour cream
- Salt, or vegetable broth, instant
- pepper
- 1 tbsp balsamic vinegar

Prepare the tortellini according to the package instructions. Meanwhile, chop the cherry tomatoes, cucumber, and onion and place them in a bowl. Add the drained and cooled tortellini to the remaining ingredients. Mix in the sour cream, sour cream, and balsamic vinegar, and season with salt (vegetable stock) and pepper. This is a light and super-quick summer salad that’s always the first to go at barbecues.
