Sesame flatbread

Ingredients for 4 servings:

  • 300 g flour (whole wheat flour)
  • 50 g flour (whole wheat flour)
  • 50 g sesame seeds, unhulled
  • 1 tsp salt
  • ½ tsp bread spice mix
  • 1 packet of dry yeast
  • 250 ml water, lukewarm
  • 3 tbsp coffee cream
  • 1 tbsp sesame seeds, for sprinkling

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mix the dry ingredients thoroughly and knead into a dough with the water. Knead for about 5 minutes until it forms a firm dough. Let it rise in a warm place until it has visibly increased in size. Then, on a floured surface, form it into four flatbreads. Brush with milk/coffee cream and sprinkle with sesame seeds. Cover and let rise again until the flatbreads have increased in size. Bake on two baking sheets at 180°C (preheated oven) for about 20 minutes, one after the other. Flatbreads are freezer-safe.
