Quick Zucchini Soup

The perfect quick zucchini soup recipe with a picture and simple step-by-step instructions.

  • 2 Diced onions
  • 1 bunch Spring onions in rings
  • 3 Diced medium zucchini
  • 3 Diced potatoes
  • 1 liter Vegetable broth harvest blessing
  • 2 Eßl Dried lovage
  • 1 a cup Cream
  • Olive oil for frying
  • 1 blob Cream for the top
  1. Fry the onion in olive oil shortly afterwards add the spring onions and fry briefly. Pour the vegetable stock and add the potatoes, zucchini and lovage and let simmer for the whole 15min.
  2. Add the cream and puree everything well, pour into a plate and add a dollop of cream to the soup. Serve with a small spoon and a straw.
