Quince crumble

Ingredients for 8 servings:

  • 6 quince(s)
  • 100 g sugar
  • 1 tbsp butter
  • 3 tbsp apple juice
  • 150 g flour
  • 75 g butter
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch(s) cinnamon powder

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Wash the quinces. Cut off the quince flesh around the stone and dice it into small pieces, leaving the skin intact. The quinces will brown quickly (but that’s okay), so work quickly. The six quinces yield about 1 kg of diced flesh. Caramelize 100 g of sugar with 1 tablespoon of butter, add the quince flesh, mix, and deglaze with apple juice. Sauté for five minutes, until the first pieces begin to soften. Meanwhile, make the crumble from the flour, sugar, butter, vanilla sugar, and cinnamon. Place all the ingredients in a bowl and knead by hand until lumps form. Transfer the quinces, if possible without liquid, to a tart dish and sprinkle with the crumble. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 30 minutes, until the crumble is lightly browned. Allow to cool slightly and enjoy on its own, with vanilla ice cream or vanilla sauce, or as desired.
