Ingredients for 3 servings:

  • 1.2 kg quince(s) (apple quinces have a more intense flavor)
  • 200 g sugar
  • 3 pieces of star anise
  • 1 stalk(s) cinnamon

Instructions

according to grandma’s recipe

Wash the quinces thoroughly and rub off any fuzz, then halve, core, and cut into larger pieces. Cover with water and simmer over medium heat for about 40 minutes. Strain the quinces through a cotton cheesecloth and squeeze the excess liquid. Combine the juice with the sugar, star anise, and cinnamon in a saucepan, bring to a boil, and simmer for about 10 minutes. Bottle the syrup, seal tightly, let it cool completely, and then store in a cool, dark place.
