Quinoa-Avocado-Arugula Salad

Ingredients for 4 servings:

  • 200g quinoa
  • 2 spring onions
  • 2 tomatoes
  • ½ cucumber(s)
  • 1 avocado(s)
  • ½ bunch arugula
  • 1 clove(s) garlic, pressed
  • 1 tbsp raspberry vinegar or balsamic vinegar
  • some agave syrup
  • 1 tsp mustard, sweet
  • 1 pinch of chili powder
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Prepare the quinoa according to the package instructions and let it cool slightly. Dice the tomatoes, cucumber, and avocado, and thinly slice the spring onions. Mix everything with the arugula and the quinoa. Now prepare the dressing. Mix the remaining ingredients together well and season with salt and pepper. Toss the dressing with the salad.
