Spaghetti with scampi and spinach

Ingredients for 4 servings:

  • 400g spaghetti
  • salt water
  • 400 g scampi, frozen, thawed
  • 300 g cream
  • 150 g leaf spinach, frozen or fresh
  • 1 onion(s)
  • 2 cloves garlic
  • Curry powder, mild
  • some chili, fresh
  • salt and pepper
  • possibly cornstarch to bind
  • olive oil
  • Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 hours 15 minutes; Total time approx. 20 hours 35 minutes

with a light curry note

Finely dice the onions, finely chop the garlic, and some fresh chili. Fry them with the scampi in hot olive oil. Don’t overcook, or the scampi will dry out. Pour in the cream and simmer slightly. Thicken with a little cornstarch if necessary. Season with curry, salt, and a pinch of pepper. Add the thawed and slightly torn spinach or fresh spinach. Finally, add the spaghetti, which has been cooked in salted water according to the package instructions. Serve with freshly grated Parmesan cheese.
