Quinoa Minced Meat Muffins with Corn Flakes Crumble

for the maffins

  • 100 g Quinoa
  • 200 ml Vegetable broth
  • 250 g Mixed minced meat
  • 20 g Cornflakes
  • 1 piece Onion
  • 2 piece Clove of garlic
  • 1 piece Chilli pepper
  • 2 piece Carrots
  • 1 piece Paprika
  • 1 tbsp Extra virgin olive oil
  • 1 piece Egg free range
  • 1 tbsp Finely chopped parsley
  • 1 pinch Ground allspice
  • Salt and pepper

  • 50 g Cornflakes
  • 1 tbsp Butter
  • 1 piece Garlic clove finely chopped
  • 50 g Parmesan
  • 1 tbsp Finely chopped parsley
  • Salt and pepper

How to prepare quinoa minced meat muffins

  1. Put quinoa in a sieve and rinse with hot water, then drain. Heat the vegetable stock in a saucepan, add the quinoa and simmer with the lid closed on a low heat for about 15 minutes. Remove from the stove and allow to swell for 10-15 minutes. Place cooked quinoa in a bowl to cool.
  2. Put the cornflakes in a freezer bag and crumble them with a pasta roller. Peel, wash and chop the onion. Peel the garlic cloves and finely chop with the chilli pepper. Peel the carrots and grate finely. Halve the paprika, remove the white skins and seeds and cut into small pieces.
  3. Heat 1 tablespoons of olive oil in a coated pan and fry the onion cubes in it. Add the chilli pepper, garlic, carrots and bell pepper to the onions in the pan and fry briefly. Remove the pan from the heat and let the vegetables cool.
  4. Mix the quinoa with the minced meat. Mix the cooled vegetables into the quinoa minced meat mixture. Add the egg, finely chopped parsley, corn flakes and a little allspice, season with salt and pepper and knead everything together until it becomes smooth. Cover and let the quinoa minced meat dough stand for about 30 minutes.

Preparation of the corn flakes crumble

  1. Crumble 50 grams of cornflakes and knead with 1 tablespoon of butter, a finely chopped clove of garlic, Parmesan and finely chopped parsley to make crumble. Season with salt and pepper.

  1. Insert a muffin baking tin (12 wells of 80 ml each) paper sleeves. Likewise, fill the quinoa and minced meat batter into the hollows.
