Ingredients for 4 servings:
- 200g quinoa
- 450 g vegetable stock
- 1 onion(s)
- 1 garlic clove(s)
- 5 tbsp tomato paste
- 2 tbsp soy flour
- 2 tbsp chickpea flour
- 1 tsp herbal salt
- 2 tsp paprika powder, smoked
- 1 tbsp oregano
- 1 tbsp thyme
- 1 tbsp rosemary
- 1 tbsp chives
- 2 tbsp nutritional yeast
- Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Wash the quinoa thoroughly to remove any bitterness and drain in a sieve. Bring the vegetable broth and quinoa to a boil in a saucepan. Simmer on low heat until the broth is absorbed. Allow the quinoa to cool slightly. Meanwhile, finely dice or chop the onion, garlic clove, and fresh herbs. Mix all ingredients well. Form patties and fry in a pan with oil until crispy. Delicious with hummus or tzatziki and salad. Enjoy the patties hot or cold.
