Quinoa spelt pancakes in the Airfryer

Ingredients for 4 servings:

  • 150 g quinoa, well rinsed
  • 300 ml water
  • 300 ml whole milk
  • 50 g sugar
  • 1 vanilla pod(s), pulp
  • 225 g spelt flour
  • 50 g pine nuts, roasted until golden brown
  • 2 tbsp baking powder
  • 2 eggs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

super tasty, simple

Rinse the quinoa thoroughly under running water in a sieve until only clear water runs through. Then boil it in 300 ml of water for about 15 minutes, drain off the remaining water and let the mixture cool. In the meantime, bring the milk (alternatively almond milk or rice milk) to a boil together with the vanilla pod, sugar and sea salt and let it cool down as well. Mix the flour with the baking powder and mix in the eggs and quinoa well. Then stir in the vanilla milk (without the pod) while stirring constantly. Grease a frying pan or the air fryer grill pan with butter or oil and dust with sugar. Pour in the batter in portions and fry the pancake in the pan on both sides or bake in a preheated air fryer at 160°C for about 5 minutes.
