Rabbit heads/hare heads

Ingredients for 1 servings:

  • 4 rabbit or hare heads
  • salt and pepper
  • 1 carrot(s)
  • ½ onion(s)
  • Butter for frying
  • e.g. beef broth or chicken broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Brown the rabbit heads, bring chicken or beef broth to a boil, and add it to the heads, a little at a time. Grate the carrots finely and sauté them, then finely chop the onion and add it to the carrots. Sauté both briefly, deglaze with water, and then add it to the heads. Cook everything for about 1.5 hours. I sometimes add a little hunter’s sauce or roasting sauce (ready-made mix).
