- 2 cup(s) sugar, fine
- 3 cup(s) flour, sifted, type 405 or 550
- 1 packet of vanilla sugar
- 1 pinch of salt

- 1 cup vegetable oil, tasteless
- 1 packet of baking powder
- 1 cup sparkling mineral water

- 2 egg whites, size M
- 250 g powdered sugar, sifted
- 1 dashes lemon juice

quick and easy, with a surprise effect
Put 1 cup = 200 ml of sugar, sifted flour, vanilla sugar, salt, eggs, oil, baking powder and seltzer water and any desired flavoring into a mixing bowl and mix everything with a mixer until it forms a nice batter and a little air has been added. Divide the batter according to the amount of food coloring and color it. Preheat the oven to 180 degrees top and bottom heat. Then gradually add a tablespoon at a time in even succession to the center of the springform pan (always add color on top of color, the mixture spreads evenly to the outside as the next color is added). Continue until all the batter is used up. Bake the springform pan on the middle rack for 20-25 minutes. Do the first skewer test in the center after 20 minutes of baking. Let the cake cool slightly and loosen from the edges. Once the cake has completely cooled, lay four strips of baking paper or something similar in a square on the desired surface and place the cake on top. Half of the paper should still be sticking out of the edge of the cake. Then you can start decorating. Now beat the egg whites until stiff peaks form, then stir in the sifted icing sugar and lemon juice. The finished mixture should be lump-free. Spread the mixture carefully on the cake and immediately start decorating with sugar confectionery or similar, as the icing sets quickly. Finally, carefully pull the paper strips out from under the cake. I then quickly placed the paper streamer evenly around the cake and pressed it onto the icing in a few places. The colorful surprise is only visible after cutting the cake, as the white icing makes it opaque beforehand.
