Ingredients for 1 servings:
- 140 g flour, gluten-free, light, e.g. Schär Mix for cakes and biscuits
- 100 g ground almonds
- 1 tsp, heaped baking powder
- 50 g butter
- 1 pinch of salt
- 1 packet of vanilla sugar
- 2 eggs
- 3 large bananas
- 150 g brown sugar
- 100 g chocolate chips or nuts

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

In a bowl, mix the flour, almonds, and baking powder thoroughly. Mash the bananas until smooth. In a separate bowl, cream the butter and sugar until fluffy. Stir in the vanilla sugar, eggs, bananas, and salt one at a time. Then add the flour mixture a spoonful at a time. Add the chocolate chips or nuts last. Pour the batter into a loaf pan lined with baking paper and bake on the middle rack at 180°C for about 50 minutes, until the top of the banana bread is golden brown. Test with a skewer. Let it chill for at least 2 hours.
