Raisin muffins

Ingredients for 12 servings:

  • 40 g butter, melted
  • 40 g flour
  • 40 g flour (wholemeal flour)
  • 1 tsp baking soda
  • some salt
  • 1 tsp cinnamon
  • 30 g wheat bran
  • 60 g raisins
  • 50 g sugar, brown
  • 40 g sugar
  • 1 egg(s)
  • 200 ml buttermilk
  • ½ lemon(s), juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 175°C and grease a muffin tin thoroughly or line it with paper baking cups. Combine flour, baking soda, salt, and cinnamon, then add the bran, raisins, and sugar. Mix together the egg, buttermilk, lemon juice, and melted butter. Briefly stir the buttermilk mixture into the flour mixture. Pour the batter into the muffin tins and bake in the oven for about 20 minutes.
