Ralf's Bratwurst Soup

Ingredients for 4 servings:

  • 4 pieces of bratwurst, coarse, preferably made from fresh minced meat
  • 300 g corn (1 small can)
  • 500 g gnocchi
  • 1 tbsp tomato paste
  • 1 tbsp sambal oelek
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • 2 tbsp onion(s) (fried onions)
  • 1 tsp rosemary, lovage and oregano (1 tsp each)
  • 500 ml meat broth
  • salt and pepper

Fry the sausages until they are cooked through and browned on top. Bring half a liter of meat broth to a boil in a saucepan and whisk together the tomato paste, sambal oelek, vinegar, and sugar. Slice the sausages, use a ladleful of broth to loosen any browning, and add them to the soup along with the sausage slices. Now add the corn, along with the fried onions, and herbs. Bring to a boil, then carefully add the gnocchi to the soup, avoiding splashing. Simmer for about 8-10 minutes. Season to taste with salt and pepper. The soup tastes best when reheated after it has cooled completely.
