Ingredients for 1 servings:
- 600 g flour
- 220 g powdered sugar
- 2 packets of vanilla sugar
- 4 egg yolks
- 400 g butter, cold, diced
- 150 g apricot jam (apricot jam)
- Powdered sugar (icing sugar) for sprinkling
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 12 minutes
Linzer eyes
Sift the flour onto the work surface. Gradually add the ingredients – the butter should be added quickly, cold, and in small cubes. Wrap the dough in cling film and chill in the refrigerator for about half an hour. Roll out the dough to the thickness of a knife’s back and cut out shapes using a round cutter (approx. 5 cm in diameter). Set aside half of the discs and cut out three eyes using a thimble. Place on prepared baking sheets. Bake in a hot oven at 180°C (top/bottom heat) for about 10-12 minutes. Immediately spread the smooth sides with jam and cover each with a perforated disc, then dust thickly with icing sugar. Store in a tightly sealed container.
