Ingredients for 1 servings:

  • 270 g plain wheat flour
  • 200 g butter
  • 100 g sugar, or fine granulated sugar
  • 2 egg yolks
  • ½ lemon(s), untreated, grated zest
  • e.g. jam, (apricot jam)
  • 1 packet of vanilla sugar
  • e.g. powdered sugar

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

This recipe makes about 40 to 60 biscuits, depending on the size! Knead all ingredients, except the jam, vanilla sugar, and powdered sugar, into a smooth dough and let it rest in a cool place for about 1 hour. Roll out the dough (about 3 to 4 mm thick). Cut out biscuits, making half of them with a hole (or several), and place them on a baking sheet. Line the baking sheet with baking paper (no need to grease it, as the dough contains a lot of butter) and place the biscuits in an oven preheated to 170°C (350°F) and bake until golden brown. Once cooled, spread the biscuits without holes with apricot jam and stick the biscuits with holes on top. Sprinkle with a mixture of vanilla sugar and powdered sugar.
