Stuffed peaches

Ingredients for 4 servings:

  • 5 large peaches, ripe
  • 125 g biscuits (amaretti biscuits)
  • 2 tbsp cocoa powder
  • e.g. ice cream (vanilla ice cream)

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Halve the peaches, remove the stones, and peel them. Place 8 halves in a greased baking dish. Puree the remaining two halves in a blender along with the amaretti biscuits and cocoa. Alternatively, crush the amaretti biscuits well with a rolling pin and mix with the chopped peaches and cocoa. Fill the peach halves with the mixture and bake in a preheated oven at 200°C for about 20 minutes. Serve cold with vanilla ice cream.
