Raspberry cream with coconut and almond confectionery

Ingredients for 4 servings:

  • 300 g whipped cream
  • 40 g vanilla sugar
  • 500 g low-fat curd cheese
  • 200 g confectionery (almond confectionery)
  • 125 g raspberries, fresh

First, set aside 30g of almond candy for decoration. Crush the remaining 170g of almond candy in a bowl with a spoon. Whip the cream with the vanilla sugar until stiff, then fold in the quark and the crushed almond candy. Pour the cream into a suitable dish, ideally a tiramisu dish, and refrigerate at +7°C for about 3 hours. Before serving, decorate with the fresh raspberries and the reserved almond candy. This recipe can always be varied with other fruits and confectionery. For example, you could use Ferrero Rocher instead of almond candy.
