Ingredients for 8 servings:
- 500 g mascarpone
- 500 g yogurt (3.5%)
- 500 g cream, stiffly whipped
- 750 g raspberries (frozen)
- 500 g brown sugar

Not for the calorie-conscious – but really a dream and super quick to prepare
Whisk the mascarpone and yogurt until smooth, then fold in the stiffly whipped cream. Empty the frozen raspberries into a large bowl or casserole dish. Spread the mascarpone cream evenly and sprinkle thickly with the dark sugar. Refrigerate the dish overnight until ready to serve—this is important so the raspberries can thaw and the sugar forms a nice, firm crust. Note: This amount of sugar sounds enormous, but it’s necessary because the remaining ingredients don’t contain any sugar.
