Raspberry vinegar

Ingredients for 1 servings:

  • 600 ml vinegar (red wine vinegar)
  • 1 tbsp spice mix (pickling spice)
  • 450 g raspberries, fresh or frozen
  • 2 sprigs lemon thyme, fresh

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Makes approx. 750 ml

Pour the vinegar and spices into a saucepan. Heat for 5 minutes. Pour the hot vinegar over the raspberries in a bowl and add the lemon thyme. Cover and let the mixture steep in a cool, dark place for two days, stirring occasionally. Strain the vinegar through a sieve, pour into a clean, dry bottle, and cork.
