Ravioli filling with arugula

Ingredients for 1 servings:

  • 1 handful of arugula, cleaned, approx. 60 g
  • 2 tbsp cream cheese, grainy
  • 1 garlic clove(s)
  • 3 tbsp Parmesan, grated
  • 1 tbsp basil, fresh or frozen
  • 1 tbsp olive oil
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

very spicy

Place the arugula, cream cheese, garlic, Parmesan, basil, and olive oil in a tall bowl and blend with an immersion blender until slightly coarsely ground. Season with salt, pepper, and nutmeg. Spread on the pasta dough (see database) to make ravioli. You’ll need to experiment a bit to determine the consistency, but I found the quantities above worked just fine.
