Ingredients for 4 servings:
- 500 g carrot(s)
- 1 large apple, red-skinned
- 4 tbsp walnuts
- 5 tbsp oil
- 3 tbsp vinegar
- 1 orange(s)
- 1 cm ginger, fresh
- some salt and pepper

For the dressing, juice the orange in a large bowl. Grate the ginger and add it. Add the oil, vinegar, salt, and pepper and mix well. Peel the carrots, wash, and core the apple. Grate both directly into the bowl. Mix everything well and let it sit in the refrigerator for 30 minutes. Roughly chop the walnuts and sprinkle them over the salad when serving.
