Ingredients for 2 servings:
- 250 g plant milk (plant drink), e.g. oat milk or soy milk
- 15 g puffed amaranth
- 1 tbsp flaxseed flour
- 1 tbsp cocoa
- 1 tbsp protein powder, plant-based, e.g. sweet lupin flour, hemp protein or pea protein
- 6 dates
- 2 bananas
- ½ tsp cinnamon
- 1 tbsp oil, e.g. linseed oil or hemp oil
- 1 handful of nuts of your choice, e.g. hazelnuts or walnuts
Instructions
Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Combine all ingredients, except the nuts, in a blender and puree. The mixture should now have roughly the consistency of a smoothie. Pour the mixture into one or more bowls and fold in the nuts. Then place the pudding in the refrigerator and let it cool for a few hours. Due to the swelling effect of the flaxseed flour, the mixture will become very thick over time, creating a delicious and healthy chocolate pudding.
