Ingredients for 4 servings:
- 1 head of red cabbage, approx. 1000 g, sliced
- 1 medium-sized onion(s), finely diced
- 1 medium-sized apple, diced
- 1 bay leaf
- 1 stalk(s) cinnamon
- 2 cloves
- 1 vegetable stock cube
- 1 tbsp sugar
- some vinegar
- Water
- salt and pepper
- 1 tbsp butter
- 150 ml red wine
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Red cabbage with apple and red wine
Sauté the onions in the butter. Sprinkle the sugar over them and let them caramelize. Once the sugar has taken on some color, deglaze with a splash of vinegar. Add the cabbage, apple, cloves, bay leaves, cinnamon, stock, and water to the pot with the onions and mix well. Let the whole thing simmer for about 1 hour, until the red cabbage is cooked to your liking. About 20 minutes before the end of the cooking time, add the red wine. Season to taste with salt and pepper, if desired. We love the red cabbage with meatballs, duck, or potato dumplings. A little tip: If you don’t have any apples at home, you can replace the water with apple juice. It tastes just as good.
