Quince – Mango – Jam

Ingredients for 1 servings:

  • 500 g quince(s), peeled and pitted weighed
  • 1 mango(s), approx. 500 g
  • 200 ml apple juice
  • 300 ml water
  • ½ lemon(s)
  • 20 g citric acid
  • 500 g gelling sugar, 3:1

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Wipe the apple quinces (or pear quinces) with a cloth, wash, peel, and core them. Cut the quinces into thin pieces and place them in lemon juice to prevent them from tarnishing too much. Peel and core the mango, and also cut it into thin pieces. Boil the quinces in the water until soft. Add the mango and bring to a boil briefly. Top up with the apple juice and let cool. Now add the gelling sugar and citric acid and let it work, then bring to a boil for 4 minutes according to the package instructions. Pour into clean, hot twist-off jars and seal tightly.
