Rice pudding – jam – muffins

Ingredients for 1 servings:

  • 3 tbsp jam (strawberry or cherry jam)
  • ¼ tsp cinnamon
  • 260 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 80 ml oil
  • 140 g sugar
  • 200 g rice pudding (ready-made product)
  • 60 ml coffee cream or cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the jam with the cinnamon. In a bowl, combine the flour with the baking powder and baking soda. In a second bowl, beat the eggs with the oil, sugar, rice pudding, and cream until frothy. Add the flour mixture and stir in. Place a tablespoon of batter into each muffin tin lined with paper liners, top with a dollop of jam, and then fill with batter. Bake in a preheated oven at 190°C for 20-25 minutes.
